This is a quick, easy, flavorful one-pan meal that will yield plenty of extra servings, and only takes a few minutes.
INGREDIENTS:
1 pound boneless skinless chicken breasts
1 yellow onion
1 head of broccoli (optional)
2 cups chicken broth
3 teaspoons curry powder
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup of white rice
INSTRUCTIONS:
1. Cut the chicken into cubes. Dice the onion. If you decided to add the broccoli, chop it up into small pieces.
2. Throw some olive oil in a large saute pan, turn it to medium-high heat, then cook the chicken. Season the chicken with the salt and pepper while cooking.
3. Once the chicken is cooked, mix in the white rice, chicken broth, onion, and curry powder. Turn the heat up to bring it all to a boil, then turn down to a simmer and cover the saute pan.
4. After about 10 minutes, the liquid should be somewhat absorbed and the rice will be about halfway done. Mix in the broccoli now if you used it – this will ensure it gets good flavor and cooks, but wont become soggy.
5. That’s pretty much it. I stir the mixture a few times as the whole thing cooks down. Depending on what kind of white rice you used, it should take about 15-20 minutes start to finish for the rice to finish cooking. By the time the rice completes, everything should be covered in a thick coating of the curry sauce, and you’re ready to eat!
