I found this recipe online somewhere years ago. This is my own little adaptation of it. I like to make these wraps the main part of the dish, and usually make something like roasted potatoes to go alongside it. These work equally well as the main protein in a meal, or on a platter at a party.
INGREDIENTS:
1 pound ground chicken
1 onion
Green onions
Lettuce (choose your favorite; something that will wrap the chicken mixture well)
SAUCE:
1/4 cup hoisin sauce
2 teaspoons sriracha
1/2 teaspoon garlic powder
2 tablespoons tamari soy sauce
1 tablespoon rice wine vinegar
1 tablespoon ginger (grate this yourself)
Salt and pepper to taste (I personally like 1/2 teaspoon salt and pepper)
INSTRUCTIONS:
1. Dice the onion and set aside. Chop the green onions finely and set aside.
2. Heat some olive oil in a pan, then cook the chicken with the salt and pepper. When the chicken is done, drain any excess oil and fat.
3. Throw the onion in with the chicken, along with all of the sauce. This should only take 2-3 minutes to cook.
4. Throw in the green onions. Cook for another minute to soften them up a bit.
5. When you’re done, wrap scoops of the chicken mixture into pieces of lettuce and enjoy.
